Half Rooted with Carlos and Bri

I sit down the Carlos and Bri of Half Rooted. Half Rooted is a modern Colombian food truck that is bringing awesome empanadas to the Scuffletown Food Truck Park.

I have the pleasure of interviewing them on the evening before the grand opening at the Scuffletown. Their excitement was genuinely contagious. Hearing their stories of being in the worst of situations but always remembering to serve well is inspiring. I think as you get to know Carlos and Bri you’ll want to pick up one of their empanadas for yourself.
